All the benefits of jelly

The so-called “jelly” or “jelly” has been present in all national cuisines since ancient times. In Russian, it is a semi-fermented dish with flour (oatmeal, wheat, rye). Pea jelly is usually eaten with meat gravy, the rest - with honey.

In Western European cuisine, jelly is prepared to a thick consistency by turning it out of a deep cup onto a flat plate. It is cooked using berry or fruit decoction or juice with the addition of honey and sugar. In the Baltics, gelatinous jelly is called “fruit porridge”.

Kissel is loved by the elderly, people who do not have excellent digestive health, and children as a dessert. An easily digestible dish can be used in the diet of a sick person immediately after complete fasting. It can last 1-2 or more days. During exacerbation of pancreatitis, the value of the drink is not limited to its ability to quench thirst.

Kissel makes a significant contribution to meeting the patient's nutritional needs. It improves appetite, promotes normalization of gastrointestinal tract activity, and the absorption of other products. The dish can be consumed warm or chilled, 1-2 times a day, 150 g.

For diabetics, sugar is not added to the jelly or its substitutes (sorbitol, xylitol) are used. For the insulin-dependent type, conventional bread units are taken into account: 2-4 XE in 1 glass of drink, depending on its consistency. It is important for obese people to know about the energy value of the dish, approximately 55 kcal per 100 g of product.

There are jelly of different thicknesses. As the first complementary food, the patient needs to prepare a liquid solution from potato (corn, maize) starch. It is considered to be of medium thickness at the dosage: for 4 glasses of water - 2 tbsp. l. carbohydrate substance. If you take 3 tbsp. l. starch, you will get a thick jelly-like jelly.

Differences between Izotov and Momotov jelly

Of the two available cooking recipes, you will find exactly your own taste.
As mentioned earlier, the cooking recipe and taste of Izotov and Momotov’s jelly have some differences. Momotov's jelly recipe is distinguished by its ease of preparation, however, it turns out with a sour taste. Izotov’s jelly recipe is characterized by a labor-intensive process of its preparation, which consists of straining, settling, and separating various sediments. However, the end result is a rather tasty drink that does not have a sour taste (reminiscent of cottage cheese). Moreover, from the resulting concentrate it is possible to cook quite a lot of jelly, which is capable of blocking various pains and bloating even with violations of the diet necessary for inflammation of pancreatitis.

What both recipes have in common is that they have no contraindications for use, although everyone knows firsthand that any medicine cures something, while another cripples. Another advantage is that the preparation of oatmeal jelly is a waste-free production, since all unnecessary leftovers are used in the form of kvass or dough additives, even as a treat for your four-legged pets.

So, in any case, try these wonderful oat drinks that truly have miraculous properties to choose the most suitable one for your body and stay healthy always.

According to the Izotov method

Vladimir Izotov suggested preparing oatmeal jelly using a different technology.

You will need:

  • Hercules flakes - 3 tablespoons;
  • buy low-fat kefir in the store, you will need about half a glass;
  • warm water – 3 liters.

Preparation: pour the flakes into a container and fill everything with water. Then gradually add kefir and mix well. The basic principle of the recipe is to stick to the fermentation method. Therefore, it is better to take a large container; you should not pour water to the very edges of the jar.

Leave everything to infuse for 2 days. As soon as the drink is prepared, it must be strained through a sieve. The resulting liquid must be added to the jar again and left for another 12 hours.

The container in which the jelly is prepared should not be metal or plastic.

Ultimately, in the container you will notice that the drink has divided into two almost equal layers. The top layer is oat kvass; it can also be drunk during chronic illness, but only in small quantities.

The bottom layer has a rich white tint; it is sour oat concentrate. It is this that needs to be separated from the first layer and placed in a cool place for another 3 weeks.

Not all patients have the patience to prepare Izotov’s recipe, so many stick to simpler methods.

Features of use during exacerbation and remission

Pancreatitis dictates its own rules, violation of which will invariably lead to its exacerbation. They apply to all products during the severe stage of the disease.

Thanks to its viscous consistency, jelly envelops the walls of the intestines and stomach without causing irritation and is well absorbed.

But some exceptions have been made for healthy jelly:

  1. The initial stages of pancreatitis require complete abstinence from food for several days. Drinking is also sometimes prohibited; it is administered only intravenously. Such strict measures are necessary to prevent the production of pancreatic juice, which worsens the disease.
  2. After 3-4 days, the patient is allowed small portions of jelly, it is better if it is oatmeal. The allowed daily intake is 150 ml, but no more.
  3. On the sixth day, the portion increases to a whole glass, but there are no other dietary allowances - fruit and berry additives are prohibited.
  4. During remission, strict restrictions on the volume of jelly are lifted, but it is advised not to introduce sour fruits into its composition, which can cause irritation of the mucous membranes.

What fruits and berries are allowed

For pancreatitis of the pancreas, fruit and berry jelly is allowed only in the remission stage. Organic acids and plant fiber in large quantities will inevitably increase the production of enzymes, which means they will again lead to an exacerbation of pancreatitis.

Fresh or frozen berries, juices, and jams are used as raw materials. The exception is cranberries and citrus fruits. Most often they choose lingonberries, cherries, honeysuckle, strawberries, sea buckthorn or black currants, and sweet apples. But before cooking, you need to make sure that the fruits do not cause allergies. Apple jelly from sweet varieties can be drunk 3-4 days after an acute attack of pancreatitis has stopped. But it should not contain any sweeteners. There are no restrictions on the use of dried fruits. Nutritionists advise making drinks from pears, dried apricots, and prunes.

Preparing milk jelly

Milk jelly
The drink has an enveloping effect and also saturates the body with calcium. Milk stimulates metabolism and normalizes intestinal function.

But before cooking, you need to purchase low-fat milk.

Preparation:

  • bring the milk to a boil (be careful not to let the milk escape);
  • add honey or sugar for taste;
  • pour in the diluted starch in a very thin stream;
  • Stir well until thick.

This milk drink can be used for pancreatitis as an addition to crumbly porridges or casseroles.
